Couscous Pilaf

Here's my favorite.

  • 1 tbs. butter
  • 1 tbs. oil
  • 1 onion, chopped
  • 1 clove garlic, pressed
  • 1/2 cup chopped mushrooms
  • 1/2 cup peas
  • 1/2 of a red pepper, chopped
  • 2 tsp. tamari
  • 1 tsp. basil
  • 1/2 tsp. marjoram
  • 1/2 tsp. curry powder
  • 1 1/2 cups water or stock
  • 1 cup couscous
  • Saute onions and garlic in butter and oil until nearly soft. Add vegetables and saute a couple of minutes, then add herbs curry powder, tamari and water or stock. Bring to a boil, add couscous, stir, return to a boil. Cover, lower heat and simmer for 2 minutes. Remove from heat and let sit for 5 minutes. Dot with butter (if desired) and stir with a fork to fluff up.
