| Soak chickpeas in 4 c. water, cook in 4-6 c. water; boil 30 min., simmer 1.5-2 hrs. Blend everything and chill. Use as vegetable dip, over falafels, or as sandwich spread. Freezes well. | ||||||

| With any of these recipes... | Chop and add any of these before chickpeas: 
 Add any of these spices: cumin; hot pepper; coriander; black pepper; garam masala. Substitute any of these liquids: soy sauce; orange or lime juice or balsamic vinegar instead of lemon juice. Low fat: use only a little tahini; eliminate oil. | |||||
| Hummus sandwich suggestions... | I prefer 5-cereals whole bread with it, and
light rye bread as a second choice. Arab bread is nice, as is pita, but normal
white is, as usual, never recommended.
