Potato Salad

  • 8 large potatoes
  • 1 bay leaf
  • 1 large onion, minced
  • salt
  • 1 can pimentos
  • 2/3 cup olive oil
  • 3 Tbsp fresh parsley, minced
  • 1/3 cup wine vinegar
    1. Peel and boil potatoes until soft with the bay leaf and salt.
    2. Let potatoes cool several hours to overnight. Slice potatoes about 1/4 inch thick.
    3. Add onion, parsley, and pimentos. Add olive oil and vinegar -- adjust to taste. Add salt to taste. Chill for several hours.
